Quick Brew Fundamentals
Start with a ratio
Use a scale when possible. For filter coffee, begin around 1:16 and adjust after tasting.
Match the grind
Finer grinds generally extract faster; coarser grinds extract more slowly. Your brewer and total contact time determine the useful range.
Use good water
Coffee is mostly water. Use fresh, pleasant-tasting water and avoid water with strong odours or flavours.
Control temperature
Very cool water may struggle to extract enough; appropriately hot water is a reliable starting point for most hot brewing.
Change one thing at a time
If the cup is not right, adjust one variable, taste again, and keep the change that moves the coffee in the right direction.
